Terroir: Castel Mimi has 48 hectares planted with Cabernet Sauvignon. The vineyards dedicated to this wine yield approximately 6–8 tonnes of grapes per hectare and are located at an altitude of 21–32 metres above sea level, with southern and south-eastern exposure, near the right bank of the Nistru River. The soil is clay-sandy, with a low humus content. Central Codru wine-growing region, Speia microzone.
Tasting notes: Matured in oak barriques, this wine captivates with intense aromas of blueberries, dark chocolate and an array of warm spices. On the palate, it reveals a rich profile of ripe red fruits, particularly cherry and plum, complemented by a pleasant smoky note and velvety, well-integrated tannins. Full-bodied and intense, it offers a harmonious balance between richness and elegance.
Food pairings: Lamb or beef dishes.
