Terroir: The vineyards are located in the Purcari micro-zone, approximately 50 km from the Black Sea. The soil consists of clay chernozem over limestone bedrock, within a moderately continental climate influenced by the nearby Black Sea.
Harvest: Grapes from the finest plots are harvested and selected by hand from mid-October to early November and placed in small plastic crates to preserve their integrity and prevent oxidation and spoilage.
Vinification: Fermentation takes place in stainless-steel tanks for approximately two weeks at +28°C / +30°C using selected yeasts. The wine is then aged for 18 months in new Seguin Moreau French oak barriques, followed by a further 6 months in Italian Tava amphorae.
Tasting notes: A dry red wine with an intense, deep ruby colour. The nose reveals savoury herbs, young cedar and ripe black fruits. The palate displays fine structure, remarkable freshness and dense, polished tannins, with notes of blackcurrant, liquorice, juniper berries, coffee and aromatic herbs. Complex, layered, concentrated and deeply textured, with a firm grip and excellent potential for further development over time.
Food pairings: Red meats, prime rib, grilled ribeye, braised beef short ribs, filet mignon, roasted duck breast, braised venison cheeks, lamb, pepper-crusted ahi tuna, roasted partridge, herb-roasted chicken, rosemary-crusted sheep’s milk cheese and grilled Portobello mushrooms.
