Ageing: Aged for 28 months in prestigious X-Blend oak barrels crafted by renowned cooper Christian Radoux. The barrels are made from 220-year-old oak trees from the French region of Limousin, planted during the era of Napoleon Bonaparte, shortly before the birth of modern winemaking in Bessarabia. The wine was subsequently aged in the bottle for a further 2 years.

Terroir: Castel Mimi has 48 hectares planted with Cabernet Sauvignon, 7 hectares with Saperavi and 5 hectares with Rara Neagră. The vineyards dedicated to this wine yield approximately 4 tonnes of grapes per hectare and are located at an altitude of 21–32 metres above sea level, with southern and south-eastern exposure, near the right bank of the Nistru River. The soil is clay-sandy, with a low humus content. Central Codru wine-growing region, Speia microzone.

Tasting notes: The wine’s intense colour reveals a vibrant and elegant bouquet, characterized by notes of dried plums and lightly smoked cherries, gradually opening into tertiary aromas of cloves and tobacco. On the palate, it is rich in juicy red fruit sensations, accompanied by subtle spicy notes. The body is round, defined by a fine balance between well-integrated tannins and refined acidity. The finish is long and complex.

Food pairings: Game fillet, Florentine steak or roast beef with oven-roasted vegetables.
